In our groves, wild thyme threads between the olive rows — same soil, same sun, same hands at harvest. On the Lebanese table they meet again: bread dipped in oil, then in zaatar. We make them for each other.

The Land
Ras Baalbek sits high at the northern edge of the Beqaa Valley — hot days, cold nights, limestone soil. Hard country that grows intensely flavored olives and herbs.
The Grove
Our olive trees share their rows with wild native thyme. Neither is farmed hard; both are simply tended, picked by hand, and left to speak for the land.
The Craft
Olives pressed within hours of picking, thyme dried slowly under the sun. Small batches, no blends, no shortcuts — the way our family has always done it.
