01Raised on the same soil

In our groves at Ras Baalbek, wild thyme grows between the olive rows, drinking the same sun and the same mountain water. Flavors that grow together tend to belong together — the peppery green oil and the herbal, citrusy zaatar are two accents of one landscape.

02The chemistry of the dip

Olive oil is a solvent for aroma: it lifts the volatile oils out of dried thyme and sesame and spreads them across the palate. Zaatar, in turn, gives the oil texture and acidity from sumac. Neither is complete alone.

03How we serve it at home

Two small plates, always side by side: one of oil, one of zaatar. Tear the bread, never cut it. Dip oil first, zaatar second, and let whoever is eldest at the table begin.

04Beyond breakfast

The pair finishes grilled halloumi, dresses tomato and cucumber salads, and crowns a simple bowl of hummus. Where one goes, the other should follow.
