Hayek Farms began with a simple observation: in our groves, the olive trees and the wild thyme were already growing together. We just followed the land’s lead.

Ras Baalbek — where our story begins

The Land
Ras Baalbek, at the northern edge of Lebanon’s Beqaa Valley, is a place of extremes: fierce summer sun, cold dry nights, thin limestone soil. These are precisely the conditions that make olives and wild thyme concentrate their flavor. What the land lacks in softness, it returns in intensity.

The Grove
Walk our rows in June and you will smell it before you see it — wild thyme threading between the olive trees, unplanted and untended, nourished by the same soil and sun. We never saw them as separate crops. The grove decided they were companions long before we did.

The Harvest
Olives are picked by hand and pressed within hours — a first cold press, left unfiltered. The thyme is cut at peak aroma and dried slowly under the mountain sun, then blended with toasted sesame and sumac by hand. Every batch is small because every batch is personal.

The Table
On a Lebanese table, oil and zaatar arrive together: one plate of green gold, one of thyme, bread torn by hand. That pairing is our whole philosophy. We don’t make products; we make the two halves of a breakfast that has fed our family for generations.
